What is the difference between Vedic and Western astrology?

The Western system measures against the seasons (tropical), the Vedic system against the fixed stars (sidereal). Because of the ~24° gap (the ayanamsa), most placements shift one sign back — that is where the "did my sign change?" surprise comes from. Both are internally consistent; they are different lenses for different questions.

What is a Nakshatra and why does it matter?

One of the sky's 27 "lunar mansions". The nakshatra your Moon falls in is considered your most finely detailed signature in the Vedic system, and it sets the starting point of your dasha periods.

I don't know my birth time — is that okay?

Yes: your Moon sign and, in most cases, your Nakshatra can still be calculated (the Moon moves ~13° a day, so it rarely changes within a single day). Lagna and house emphasis do require a birth time.
